Ingredients 200 g matzah 200 g honey 100 g sugar 0.5 tsp ginger

You can add if you wish: 50 g walnuts or other nuts 50 g raisins, dried apricots, or other dried fruits

Cooking method

Break the matzah into small pieces, no more than a centimeter on either side. If you have matzah meal, you can also use that.

Melt honey in a saucepan over low heat, add sugar and ginger. Stirring constantly, bring to a boil. Add matzah, nuts, and dried fruit to the pan, reduce heat and cook, stirring, for 5-8 minutes until the mixture turns golden brown. Remove the pan from the heat.

Cover a baking sheet with baking paper or parchment. Spread the mixture on the sheet and spread with a spatula to form an even disc no more than a centimeter high. Cut the discs into diamonds or squares.
